GREEN BEANS WITH MINT VINAIGRETTE

This is a recipe that my father, Vince Mangini, would prepare using the mint that grew wild in our garden.  This is a great side dish for any cook out! 

 

1 pound fresh green beans

2T salt

Ice for an ice bath

1/3 cup red wine vinegar

1/3 cup chopped fresh mint leaves

1/3 cup olive oil

1 ½ tsp sugar

Salt and pepper to taste
